Theotis Cason opened his Kenton butcher shop in the summer of 2011 in a storefront just south of the towering Paul Bunyan statue. The building used to house another butcher shop until a few years ago and now it does again.
All of the beef in the case comes from Oregon Natural Meats, including 10 or so different cuts of steak and all the other usual suspects.
The pork is from Carlton Farms. A Cason's specialty is the house-smoked meat selection, including turkey necks, and wings, pork shank and barbecued ribs, available by the rack, half-rack or four-rib cut.

Kenton's Beginnings in Butchery
Cason's Fine Meats is a part of a long history of butchery and industry in the Kenton area. The original town of Kenton, Oregon was built right at the intersection of waterways and the railroad to provided for industrial commerce. Previous to the turn of the century there were half a dozen independently operating local butchers who came together in 1893 to form the Union Meat Company. Although, the company would continue to be known by that name locally, Swift & Company purchased their assets in 1906.
The Stockyards of Kenton
Beginning around 1910, the Pacific International Livestock Exposition took place annually in Kenton. In the 1980s, these buildings were sold to the Multnomah County where the Multnomah County Fair used them for another twenty years. Portland Union Stockyards closed in the 1980s and it was then the present Industrial Park then was built. Cason's Fine Meats provides as reminder of Kenton's historic industry.
The Early Industry
In this historic map of North Portland put out by the North Portland Commercial Club in 1919, Kenton is centrally located at its heart. The map appears to be a promotion for the commercial and industrial potential of the area by illustrating the many forms of transportation such as rail, highway, streetcar and shipping channels. Until 1928, cattle were herded down Kenton's main street, Denver Avenue.
Theotis Cason Opens Shop
After many diligent years of working in the meat industry, Theotis opens his very own butcher shop during the summer of 2011 in a storefront just south of Kenton's towering Paul Bunyan statue. Replacing another butcher shop that had preiously occupied the space, Cason's continues the rich legacy of butchery in the Kenton neighborhood.
